30 while 30: bake a cake from scratch

I figured I’d kick off my list goals quickly and tackle the cake making early on… I mean, who really doesn’t want to eat cake?!? Plus it was the belated b-day cake that I didn’t get to enjoy on my birthday.

I decided to tackle a recipe that had left my mouth watering on the wright recipes blog: a vanilla/chocolate cake with fruity buttercream. Sadly our local market didn’t have blood orange jam of any sort, so I subbed in some apricot, pineapple & tangerine jam in its place. And how did it turn out?

Just lovely if you ask me! The cake was light and fluffy, and the buttercream was light as air! I wouldn’t hesitate to make it again for a special occasion…

And the best part about this cake? You don’t have to decide on a flavor… they’re all right there inside! In fact, I think I’ll go run to the kitchen and grab another little slice for dessert!
