Pork Tenderloin with Roasted Apples and Onions

I made this recipe on a whim on Monday, and suddenly it felt like fall. It definitely was a lot more than we’re used to eating on a normal weeknight, but it was so delicious that neither of us quite minded. The only change I made to the recipe was adding some extra brown sugar to the glaze, since we only had “light” syrup in the house. The apples were amazing and the perfect substitute for processed applesauce. This would be a great recipe for company… since it’s easy, pretty $$ reasonable and very impressive in presentation and taste. :)
