Hooray for links this time around!
Monday’s night’s recipe: my version of “Tender Greens” (Culver City, CA) Chinese Chicken Salad (aka. the only place on earth where I will ORDER and eat a salad because it’s just that good)

Serves 2
Ingredients:
– 1 grilled chicken breast (10-12 oz) shredded
– 1 carrot (shredded)
– 2/3 package of spicy greens/spring mix
– wonton strips or crispy noodles
– crushed peanuts
– 1/4 cup Soy Vay Chinese Chicken Salad Dressing (or your favorite sesame dressing)
– 1-2 green onions (chopped)
– golden pea sprouts (if you can find them!)
Assemble all ingredients in a large mixing bowl, and gently toss until all are covered with the dressing. Serve and gobble it up!
