the faux Phd in baking

It’s general party etiquette to never show up empty handed. Sometimes we like to bring a bottle of wine, other times it’s bringing along a board game for entertainment. But if you’re the kind of person that likes to bring along cupcakes and cakes, I’d like to introduce you to a wonderful person that might make that task a little easier: The Cake (mix) Doctor.

Her 2nd book, The Cake Mix Doctor Returns, sits among the highly used cook books. On Saturday, before heading to my pal Michelle‘s house for her birthday party, I opened up the book to find chocolate cake inspiration and landed on her Kahlua Chocolate cake. While all the actual cake bases are made from box mixes that have a few extra ingredients, the frosting and toppings are all from scratch! All I had to do was ask Mr. M to pick me up some buttermilk, and an hour later, I had a full frosted two layer cake ready to go!

I shared the book with my co-worker last year, and I’m pretty certain she’s tried out every single bundt cake recipe in it. The recipes are so easy that she bakes each week with her grandkids and then has the results to share with her weekly church group. My go-to red velvet cupcake recipe came from the Cake Doctor long ago, and I can’t tell you how much people rave about it (I think it’s the peppermint frosting that is the big winner!). Basically, it’s the best book to have on hand for a foolproof cake at any time.

Trust me, it looks great sitting on the shelf next to Nigella and Martha!
