refreshing recipe: hibiscus mint iced tea
If you saw the photos of my mint plants yesterday, you’d understand my need to search for mint recipes. When I happened upon this recipe on Saturday from Everyday Food, I jumped to making it because the ingredients were all right at hand!
Ingredients:
3-4 bags of Hibiscus Tea (I used Republic of Tea’s HIBISCUS)
A handfull of mint leaves
2 cups of apple juice (I used Kirkland’s Fresh Pressed)
6 cups of water (4 cups of boiling; 2 cups of cold)
Directions:
1. Boil 4 cups of water. When it’s at a good boil, remove it from heat and add your tea bags and mint leaves. Let it steep for 10-12 minutes.
2. Strain the mixture and remove all mint leaves and tea bags.
3. In a large pitcher, combine the tea mixture with 2 cups of apple juice and 2 cups of cold water.
4. Let it cool in the fridge and then serve it over ice!
It’s a really refreshing drink with no caffeine and isn’t too sweet thanks to the lack of extra sugar outside of the apple juice!
